Blind Assessment
Luminous, intricately layered. White peach, bergamot, orange blossom, honey and cocoa nib in aroma and cup. Bright, high-definition acidity; silky, buoyant body. The finish is long and elegant, carrying citrus blossom and stone fruit sweetness far into the long.
Notes
Produced by Andres Martinez of Finca El Sendero, entirely of the Gesha variety of Arabica, and processed by the semi-washed method: The cherries first undergo a 48-hour fermentation with beer yeast, enhancing oxidation and stabilizing the flavor. The process then continues in mucilage, with the pulp remaining attached for 24 hours, during which the beans are stirred every 3-4 hours to ensure even fermentation. Heady Cup is an Illinois-based specialty roaster with a focus on sustainability and sourcing traceable green coffees. Visit www.headycup.com for more information.
Bottom Line
A beautifully composed Gesha that balances floral lift and citrus precision with honeyed depth, showcasing both processing complexity and varietal clarity.
