Blind Assessment
Gently bright, balanced, classic. Raspberry, sweet cocoa, magnolia, cashew butter, orange zest in aroma and cup. Sweetly bright and gently lively in structure; plush in mouthfeel. Flavor consolidates to orange and cocoa in a quiet but vibrant finish.
Notes
Produced by Café de Chichupac, a cooperative of smallholding producers in the Chich’upaq village in Rabinal, Guatemala, from trees of the Costa Rica 90, Parainema and Sarchimor varieties. The coffee is fermented in the whole fruit in nylon bags before de-pulping and drying in the fruit flesh, making it a version of honey processing called red honey. Coffea Guatemala is a small roaster located in Antigua, Guatemala, that offers educational programs, trainings and seeds to the farmers who supply them coffees.
