Blind Assessment
High-toned, crisply sweet. Dusk flowers, apple, peach, orange zest, lemongrass in aroma and cup. Gently sweet-tart in structure, lightly syrupy in mouthfeel. Long, resonant, exquisitely clean finish.
Notes
Produced from trees of the Pink Bourbon variety on Jhoann Vergara’s Finca Las Flores and processed at Peñas Blancas mill by a complexly detailed process involving thermal shock and anaerobic ferment.
