Notes: From the prize-winning Finca Matalapa, this coffee is composed of beans from trees of the Bourbon and Pacas varieties. The farm is divided into sections called tablones; Tablon Cumbrita is one of Finca Matalapa's highest, at over 4,000 feet above sea level. Blind Assessment: Soft aromatic notes of cinnamon, vanilla, citrus and toast. A very light roast develops brightness in the cup and simple but delicately nuanced flavors. Flowers and lime at first, deepening and sweetening to round, milky chocolate, with a gently smooth mouthfeel. Finishes cleanly, with a mild hint of sweet chocolate.
Who should drink it: A bright, light-roasted coffee, at once delicate and complex.
