Blind Assessment:

Richly sweet-savory. Baker’s chocolate, vanilla, thyme, pomegranate, spicy oak in aroma and cup. Brisk, sweetly-tart acidity; crisp, velvety mouthfeel. The richly drying finish consolidates around notes of pomegranate and thyme in the short, rounding to baker’s chocolate in the long.

Notes:

Produced exclusively from trees of the Pink Bourbon variety of Arabica by Jose Antonio Trujillo of Finca La Reforma. This is a wet-processed or “washed” coffee, meaning the fruit skin and pulp were removed from the beans immediately after harvesting and before drying. Dragonfly Coffee is a Boulder, Colorado-based micro-roaster that produces high-quality coffees and supports worthy causes. The Bottom Line: A deep, sweet-savory Colombia cup with inviting chocolate and tart-fruit notes.
