Origin: Santa Ana Region, El Salvador. Price: $15.00/12 ounces

Blind Assessment: Deeply but buoyantly pungent. Caramel, honeysuckle, lemon zest, roasted cacao nib in aroma and cup. Poised, sweetly bright acidity; syrupy, lively mouthfeel. Rich, flavor-saturated finish. The depth and persistence of flavor in the long finish is extraordinary.

Notes: This is a pulped natural (sometimes called “honey”) coffee, meaning the skin was removed from the coffee fruit immediately after picking but the beans or seeds were dried with all or some of the fruit pulp still adhering to them. This practice contrasts to the more conventional wet or washed method, wherein both skin and pulp are removed from the beans before drying. From trees of the heirloom Red Bourbon variety of Arabica.
