Coffee Review - Mexican Fair Trade Organic by Mystic Monk Coffee
91
Roast: Medium Review Date: May 2013
Origin: Chiapas State, Mexico Price: $13.99/12 ounces

Blind Assessment: Deep, sweet-toned, gently pungent. Dark chocolate in particular dominates in aroma and cup, with hints of raisin, fresh-cut pine and mint. Round, resonant acidity; smooth mouthfeel. Very sweet in the finish, with raisin and chocolate notes in particular persisting.

Notes: This coffee is certified organically grown and Fair Trade certified, meaning it was purchased from small-holding farmers at a "fair" or economically sustainable price. Mystic Monk Coffee is a small-batch roaster associated with a Carmelite monastery located in the Rocky Mountains of northern Wyoming. Roastmaster Brother Java emphasizes his artisan approach to roasting and his commitment to quality. Visit www.mysticmonkcoffee.com or call 877-751-6377 for more information.

Who Should Drink It: Those who enjoy a fine example of a round, deep, less acidy profile.
