Blind Assessment: Flat, woody sensations almost completely dominate, probably owing to the acid-reducing, super-slow roasting process exacerbating a mild mustiness in one or more of the component green coffees. Lean but smooth mouthfeel. We may have picked up some softening apricot-like fruit in aroma and cup. Notes: Puroast claims that its extremely slow roasting process in a sealed drum results in "50% lower acidity" producing a "Stomach Friendly Coffee." "Feel better not bitter," reads the trade-marked slogan. The website suggests that the 50% figure is based on measurements of quinic acid, a substance created by the transformation of chlorogenic acids during roasting and associated with bitter and sour sensations. Puroast is a long-established company selling its super-slow-roasted coffees through Walmart, natural foods stores and its website.
