A minty, brandyish dark chocolate fills in the middle. Balanced, juicy acidity; syrupy yet lively mouthfeel. Simplifies just a bit in the finish, though a chocolaty sweetness manages to soften a lean toward drying astringency in the long. Notes: This is a dry-processed or "natural" coffee, meaning the beans were dried inside the fruit rather than after the fruit has been removed, as is the case with the wet-processed or "washed" coffees more typical of southern Ethiopia.
