Blind Assessment: Intense but rather simple aroma: faint suggestions of dusk flowers, fir, blackberry. Sweetly tart acidity; silky mouthfeel. In the cup aromatics lift and open: lemon, dusk flowers, hints of white wine and fresh pipe tobacco. Sweet, slightly astringent finish with good flavor persistence, particularly flowers.

Notes: This 100% Bourbon-variety coffee comes from one of the highest elevation farms in the Apaneca-Ilamatpeque mountain range of El Salvador. Finca San Joaquin rises to 5,550 feet above sea level, and receives full sunlight in only the early part of the day, resulting in a very drawn out maturation time for the cherries.
