Roast: Medium-Dark Review Date: September 2010
Origin: Santa Ana Department, El Salvador. Price: $18.00/500 g (17.6 oz.)

Blind Assessment: Evaluated as espresso. Intense cedary, fruit-toned wood in the aroma; some acidity in the cup, with chewy, raisiny fruit notes leaning toward dark chocolate. A hint of flowers at the top. Strong presence in two parts milk: full mouthfeel, bittersweet chocolate, with the aromatic wood nuance rounding toward nut.

Notes: Produced from trees of the Bourbon and Typica varieties at an elevation of approximately 4,800 feet by farmer Ernesto Pacas Diaz and his wife Blanca Estela on the award winning Santa Sofia farm. Coava is a Portland based coffee roaster that aims to provide quality coffee and the knowledge needed to properly brew that coffee. Who Should Drink It: Rich, intense single-shot espresso with a powerful, bittersweet chocolate presence in milk.

Coffee, more so than wine, is a continually changing product. Recent reviews, whether written by Coffee Review or readers, are most likely to reflect current versions of a given coffee.
