  • El Salvador Santa Sofia

Roast: Medium Review Date: August 2010
Origin: Santa Ana Department, El Salvador. Price: $9.25/8.8 oz.

Blind Assessment: Crisply but pungently sweet: molasses, fir and flowers in aroma and cup. Gentle acidity, lightly syrupy mouthfeel. The flavor fades in the finish but the sweetness remains.

Notes: Produced from trees of the Bourbon and Typica varieties at an elevation of approximately 4,800 feet by farmer Ernesto Pacas Diaz and his wife Blanca Estela on the award winning Santa Sofia farm. Coava is a Portland based coffee roaster that aims to provide quality coffee and the knowledge needed to properly brew that coffee. Who Should Drink It: A naturally sweet breakfast cup, simple and direct.

Coffee, more so than wine, is a continually changing product. Recent reviews, whether written by Coffee Review or readers, are most likely to reflect current versions of a given coffee.
