Evaluated as espresso produced in a 40ml/1.35-ounce shot by a Singolo capsule espresso brewer with whole milk heated using a conventional steam wand. Shots from the tested samples of this blend were rather uneven in aroma and flavor, suggesting that blending may not have been sufficiently thorough before the coffee was ground and put in capsules. The mouthfeel was full and syrupy in all shots, but in flavor and finish some shots were dominated by a simple woody molasses, whereas others were livelier, with the wood note more aromatic, the molasses approaching carob, and hints of a tart fruit. The best shots were particularly impressive in three parts whole milk, where they displayed a roundly nuanced milk chocolate.

Evaluated as espresso. Ken (91) liked this bright, zesty espresso; his co-taster (92) liked it even better. Both admired the citrus and floral vivacity of the aroma and flavor. Ken and his co-taster both accepted the smooth though rather light mouthfeel as an appropriate complement to the lively aromatics; both enjoyed the emergence of a lower-toned fruit (fig, roasted cacao nib) in the finish. Ken found the sweet-citrus impact in three parts milk a bit more pleasing than his co-taster did, though the co-taster offered an apt descriptor for it: “key lime pie.”

The co-taster read “berries, pineapple and dried fruits” in the small cup; Ken’s associations ran to parallel descriptors of grape, orange, apricot and fresh-cut cedar. The fruit notes suggest in particular tartly sweet tropical fruit like guava, passion fruit or fresh lychee. For Ken (91) berries plus a lot of other notes: brandy, malty dark chocolate, fresh-cut cedar. In the small cup Sean felt the aromatics turned crisper and drier: lemon, flowers, green bitters (as in asparagus); Ken read the same rounder, brandyish, cedary berries-and-chocolate notes as he had in the aroma. Evaluated as espresso. In the small cup exhilarating floral-toned aroma balanced by orange and caramel, light though smooth mouthfeel, and continued floral tones in the flavor with complications of tart berry, lemon and baking spice. The flowers become even more pronounced in two parts milk, deepened by notes of butter, citrus and cocoa.

Notes of tea rose, honey and orange in the aroma. Long, sustained flavors in the small cup, displaying a deeper, more complex variation of the aroma profile (including brandied fruit, flowers and chocolate) with the flavors persisting in the long, sweet-toned finish. Lean but smooth mouthfeel. Retains impressive complexity in two parts milk: lemon and flowers softly layered on deeper chocolate, nut and caramel tones.

Rich, brandy-like notes dominate in this classic dried-in-the-fruit coffee, complicated and enriched by cherry, orange and floral nuance. The balanced, well-integrated acidity is perhaps more wine-like than brandy-like; the mouthfeel is big and syrupy. The brandy tendency turns slightly astringent in an otherwise fine, flavor-saturated finish.

Bright with bergamot and bittersweet lemon, crisp baker’s chocolate and fresh-cut fir, this dried-in-the-fruit coffee cupped more like a fine Ethiopia washed coffee than a natural, though a rounding hint of cherry-blueberry sweetness complicated the profile and appeared to confirm its processing method. Evaluated as espresso. For both Ken (93) and co-taster Andy Newbom (93) softly complex fruit, floral and citrus were the main themes here, with the most distinctive nuance the sweet, rich character of the citrus. Andy described it in multiple ways, from "citrus jelly" to "chiffony and meringuey" in the small cup to "lemon curd" in four parts milk. Ken also cited a backgrounded crisp cocoa that supported the pervasive lemony richness. Probably best as a straight shot, but successfully imposed its citrusy elegance on tall milk.

Evaluated as espresso. Delicately rich aroma, medium body but slightly leanish mouthfeel. Co-cupper Andy Newbom (88) found the flavor in the small cup a bit sweeter-toned ("fruit and chocolate") than Ken (89), who described a "crisp aromatic wood, walnut and licorice". But both felt the cup smoothed and softened in a pleasing, fruit-toned finish. In four parts milk displayed an attractive and rather distinctive dried fruit and chocolate character: "sweet chocolate, prunes and carob" in Andy’s words.

Cherry-toned chocolate and caramel notes in the aroma. In the cup the cherry sensation deepens to a sustained and rich apricot-like fruit. The sweetness carries into the finish, outlasting a slight touch of astringency.

Rich, sweetly roast-dominated aroma and flavor. The charred aromatic wood character is softened by caramel, raisin and soft earth notes. The roast character carries into the finish, with a continued caramel sweetness that rounds and enriches a slight astringency.

Pungent aroma of mixed fruit, a fir-like wood and honey. These aromatic notes grow more intense and complex in the cup, displaying suggestions of herb and a more fragrant, cedar-toned wood. The fruit notes - berry, stone fruit, citrus and black currant - become more prominent as the cup cools, persisting in a long, flavor-rich finish.
