Evaluated as espresso. Intense, complex aroma: cedar, dark chocolate, roasted nut, night-blooming flowers. The aromatics sharpen in the small cup; the flowers turn toward anise and the cedar note dominates. Lightly syrupy mouthfeel; rich, buttery finish. Paradoxically turns rather bitter and dry in two parts milk, but softens and sweetens in longer milk, which develops the dark chocolate note while maintaining some deepening memory of cedar and anise.
Syrupy mouthfeel, quietly vibrant acidity. Fir, molasses, orange zest, lush night-blooming flowers in aroma and cup. Flavor quiets and consolidates in a long, resonant finish.
Evaluated as espresso. Sweet, rich, balanced. Sugary vanilla, crisp baking chocolate, dried orange peel and berry-toned fruit in aroma and small cup. Full, smooth, creamy mouthfeel; candyish vanilla in particular carries into a flavor-saturated finish. Flavor persists well in two parts milk, balanced and composed.
Rich, close-knit complexity. Flowers, honey, lime, nut-toned dark chocolate in aroma and cup. Balanced, juicy acidity; lively, lightly syrupy mouthfeel. Gently flavor-saturated finish.
Gently pungent, harmoniously complex. Sweet flowers, rich, cocoa-like chocolate, walnut and an orangy fruit in aroma and cup. Crisp acidity. Delicate, very silky mouthfeel. Flavor persists into a rather drying finish.
Caramel, brown sugar, vanilla, orange in aroma and cup, with a slight, shimmering suggestion of violet-like flowers. Rich, deep-toned acidity; syrupy mouthfeel. The almost sugary sweetness turns toward chocolate in a resonant finish.
Pungent, sweetly tart: Cranberry, honey and nectarine-like stonefruit in an intense aroma rounded by a cocoaish dark chocolate in the cup. Rich, fruit-toned acidity; lightly syrupy mouthfeel. Fruit and cocoa in particular carry into a slightly dry finish.
Ripe, balanced cup. Cocoaish chocolate, lemon, peach, a hint of fir in aroma and cup. Crisply delicate, rather juicy acidity; silky but lean mouthfeel. The dominant cocoa note carries into a slightly drying finish.
Fresh, naturally sweet, dominated by floral and honey notes anchored by a complicating hint of fresh-cut fir. The acidity is giddily and sweetly bright; the mouthfeel lively and somewhere between silky and creamy in texture. Long, resonant finish.
Evaluated as espresso. Very sweet-toned, gently bright aroma: sweet cocoa, pineapply fruit. In the small cup lean but silky mouthfeel, with the fruit and cocoa notes deepened and enriched by hints of wine, cedar and leather. In two parts milk a sweet chocolate dominates complicated by gently tart fruit.
Tart berry notes, pungent fir, and an enveloping cocoa sweetness in both aroma and cup. Zesty, delicate acidity; silky mouthfeel. The sweet cocoa carries into a roundly balanced finish with a slight savory edge.
Gently and sweetly bright, delicately balanced. Milk chocolate and plum-like fruit with hints of vanilla and fresh leather in aroma and cup. Softly tart acidity; silky mouthfeel. Sweet though very slightly drying and astringent in the finish.
Soft notes of fruit in the aroma deepen in the delicate, crisply balanced cup, suggesting sweet orange and a lemon-toned cocoa. Silky mouthfeel. Gentle, sweet-toned acidity. A fruit-edged sweetness carries into the finish.
Complex and unusual. Flowers, lemon, cocoaish nut, with a very distinctive pungent, stewed fruit note, sweet yet savory. Rich acidity, syrupy mouthfeel. Long, flavor-saturated finish.
Deep, rich and pungent in aroma and cup. Roundly sweet with flavors that layer dried berries, apricot and spicy tea rose atop dark chocolate. Flavors penetrate deep into a long, resonant finish.
Evaluated as espresso. Sweet aromatic notes of raisin, chocolate and soft citrus. Full flavored in the small cup, with bittersweet fruit-infused chocolate hinting at grape, berry and orange, all of which persist deeply into the finish. Flavors predictably simplify in two parts milk but remain pleasing: sweet-toned fruit with a distinct minty complication.
Evaluated as espresso. Sweet-toned and round. Caramelly sweetness softens toasty citrus tones and fleeting hints of lavender and carob in the small cup. Flavors linger delicately and cleanly in the finish. The sweetness theme persists in two parts milk: subdued layers of lemon, flowers and more carob.
Rich and sweet, combining notes of citrus, stone fruit, honey and flowers. In the cup a brisk tartness balances a lush, juicy character. Lightly syrupy mouthfeel. Flavors slowly fade in the finish to a slightly astringent tartness.
Symphonically fruit-toned and shimmeringly bright. An “underlying crushed grape sweetness” (co-cupper Wendy De Jong, 94) supported an array of lemon and berry suggestions. Ken (94) found deepening hints of fresh-cut fir and dark chocolate as well. Forward but accessible acidity, silky mouthfeel, sweetly tart finish.
Co-cupper Wendy De Jong showed a bit more enthusiasm (89) than Ken (88) for this roast-influenced profile. For the dominant aromatic note in the cup Wendy read “fresh fig,” Ken simply “raisin.” Both cited a pungent, spicy cedar; Ken added dark chocolate. For Wendy the acidity was “mild and fruity.” Fullish body, though Ken found the mouthfeel slightly lean.
Evaluated as espresso. For both Ken (93) and co-taster Andy Newbom (93) softly complex fruit, floral and citrus were the main themes here, with the most distinctive nuance the sweet, rich character of the citrus. Andy described it in multiple ways, from "citrus jelly" to "chiffony and meringuey" in the small cup to "lemon curd" in four parts milk. Ken also cited a backgrounded crisp cocoa that supported the pervasive lemony richness. Probably best as a straight shot, but successfully imposed its citrusy elegance on tall milk.
Evaluated as espresso. Co-taster Andy Newbom (91) and Ken (91) in particular admired the mouthfeel of the straight shot: "big in the mouth ... viscous but not heavy" in Andy's words. In flavor licoricy and spicy, slightly sharp, rounded by prune and berry notes. In four parts milk the flavor plumped up and rounded beautifully toward a complex chocolate, in Andy's words "chocolate ... nuts and candied apple."
Soft butter, nut and aromatic wood in the aroma. Bright, distinctly fruit-toned acidity and a silky mouthfeel. Sustained flavor deepens in the cup: sweet citrus complicates and enlivens the aromatic wood and nut notes. Flavors soften and persist gently in the finish.
Rich aroma and flavor highlighted by sweet-toned lemon with suggestions of flowers, berries and baking chocolate. Bright acidity, lightly syrupy mouthfeel and a finish that fades perhaps a bit too quickly, especially as the cup cools.
The sweet-toned aroma suggests butter, toast, raisiny fruit. In the cup, deep, roast-muted acidity, medium body, soft mouthfeel and straightforward flavors of molasses and nut-toned chocolate with a continued hint of dried fruit. A mild bittersweet chocolate character fades quickly in the finish.
Deep floral and sweet citrus aroma with hints of toast. Well-integrated acidity, with medium body and a silky mouthfeel. Complex yet delicate flavor notes include cherry, citrus, flowers and muted nut, with a long syrupy sweet finish.
Bittersweet aroma with baking spices, chocolate and walnut. Sweet acidity in the cup with dark berry, stone fruit, cocoa and cedar notes. Rich finish, with more chocolate tones lingering in the long.
Straightforward aroma with hints of toast and mild citrus. In the cup, bright but sweet acidity, medium body, and flavors of tart lemon sweetening toward soft caramel. Clean, simple finish.
Straightforward, lucid, classic. Very sweet-toned aroma with fresh coffee fruit (tart cherry) and honey notes, hints of cedar and lemon. In the cup the honeyish sweetness envelops an intense though not sharp acidity. Continued coffee fruit notes with a lemony lean. Richly tart finish.
Deep aroma with dry floral and tart berry and chocolate notes. Sweetly high-toned and acidy in the cup, delicately rich, hints of dry berry, sweet herb, flowers. Lightly astringent but refreshing finish.
A crisp, malty fruit runs through the profile, suggesting a low key bouquet of possibilities: peach, cedar, chocolate, black currant, cherry. The finish is particularly impressive, rich, sweet, long, and nuanced with persistent berry and cherry tones.
Gently bittersweet aroma with chocolate, cherry and cedar notes. Roundly rich in the cup, with distinct dry cocoa and surprising floral notes. Sweet and rich in the short finish, with a slight astringent bite in the long. Gains in power and quiet complexity as it cools.
Smoky, cedar- and cherry-toned fruit in the aroma. In the cup round, rich, bittersweet, with a tart, cherryish chocolate - think pie cherries rolled in unsweetened chocolate - and a sweet, floral-toned acidity. The finish strikes me as slightly too astringent.
In the aroma flat, rather woody, with low-toned fruit notes suggesting a sort of spicy banana. These odd but pleasant fruit notes persist in the rich though rather monotoned cup, which grows flatter and woodier as it cools. Medium body, clean, rich, rather pleasant finish.
In the aroma shallow in sensation but pleasantly sweet with orange- and aromatic-wood notes. The cup is sweet, delicate, complicated by orange and a hint of milk chocolate but shadowed by flat, woody undertones. Sweet, clean short finish, but in the long the woody, flat undercurrents resurface.
The aroma is low-toned but resonant with leather and fruit-toned chocolate. The acidity is rich and smoothly integrated, the mouthfeel round and supple. The chocolate declaration in the aroma is even more pronounced in the cup, but fruitier, more opulent.
Low-toned and pungent, bittersweet rather than acidy. Cedar and chocolate hints in the aroma; in the cup a deep, pruny (or perhaps dried fig) fruit and crisp, dry berry notes, with perhaps a little rounding suggestion of chocolate.
Dry and forceful. The acidity is intense but sweet. The fruit is crisply austere: black currant, sauvignon blanc wine grapes. A challenging coffee that commands rather than seduces.
An intense but balanced coffee, its quietly powerful acidity enveloped in sweetness. The spice and sandalwood notes in the aroma fade in the cup, but the finish is clean, long, and lovely.
A subtle, lush coffee, richly sweet and gently acidy with shimmers of flowers. Notes of fermented fruit give the cup a juicy, decadent opulence that will please more adventurous palates but may put off coffee traditionalists.
Displays a fundamentally pleasing balance of bitter tones, sweetness, and low-toned, roast-nuanced fruit, but ultimately seems restrained and faded. Probably last year's crop; the new crop may bring more liveliness and nuance to the cup.
The extremely dark roast (about as dark as roasts get) leaves hardly a trace of Honduras behind, just some anonymous burned tones, gentle and sweet until the finish, when the sweetness vanishes, leaving behind a salty astringency.
Sweet, rich with hints of lemon and flowers, low-toned but solidly authoritative. The body is exceptional: big, smooth, mouthfilling, with impressions of cream. The rich, lemony character lingers pleasingly in the aftertaste.
